Ask the Chef
Browning the Beef: Take your time during the browning process, ensuring the beef is fully cooked through and browned before moving onto the next step. This will ensure a depth of flavor throughout the dish.
Spice Ratios: Adjust the ratio of spices to your preference. If you like more heat, add in more red chili powder or green chili. Similarly, if you enjoy the flavor of cumin or coriander, up the amounts to suit your taste.
Tomatoes: Ripe tomatoes work best in this recipe but if you don’t have them, canned tomatoes can work as well. Simply substitute 1 can of diced tomatoes in lieu of the fresh tomatoes.
Consistency:If you find the mixture is getting too dry while simmering, add a splash of water to keep it moist, but not too much that it becomes soupy.
Cilantro: Fresh cilantro adds a wonderful brightness and freshness to the curry, making it more appetizing. Accordingly, don’t skip the fresh cilantro in the end and use it as a finishing topping to balance the heat of the curry.
