Ask the Chef – Tips & Tricks

Thaw Green Beans: Be sure to thaw the green beans before adding them to the casserole. Otherwise, they will release too much moisture and make the dish watery. You can use a microwave or simply thaw them overnight in the fridge.
Use Shoepeg Corn: Shoepeg corn has a sweeter and more delicate flavor than regular corn. If you can’t find shoepeg corn in your local grocery store, you can substitute it with regular sweet corn.
Grease the Baking Dish: Grease the baking dish with cooking spray or butter to prevent sticking and make cleanup easier.
Don’t Overmix: Don’t overmix the ingredients once you’ve added the Jiffy corn muffin mix. Overmixing can cause the casserole to become dense and heavy.
Check for Doneness: Check the casserole for doneness by inserting a toothpick into the center. If it comes out clean, the casserole is ready. If it’s not clean, continue baking for a few more minutes.
Let Cool: Let the casserole cool for a few minutes before serving. This will make it easier to cut and prevent it from burning your mouth.
