1 Cup Arborio Rice
2 Cups Chicken Broth
1/2 Cup White Wine
1/2 Cup Pineapple Juice
1/4 Tsp Saffron Threads
1/2 Cup Diced Pineapple
2 Tbsp Unsalted Butter
1/2 Cup Grated Parmesan Cheese
1/4 Cup Fresh Parsley
1 Small Onion, Diced
2 Cloves Garlic, Minced
Salt and Pepper to taste


1. Heat the butter in a large pot over medium heat.

2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

3. Add the arborio rice and stir to coat with butter. Cook for 1 minute.

4. Pour in the chicken broth, white wine, pineapple juice, and saffron threads. Bring to a boil, then reduce to a simmer.

5. Let the mixture simmer until the rice has absorbed most of the liquid, about 15-20 minutes.

6. Add the diced pineapple and stir to combine. Simmer for an additional 5 minutes.

7. Remove from heat and stir in the Parmesan cheese, fresh parsley, salt, and pepper.
