1 Tbsp Olive Oil
3 Garlic Cloves, minced
1 Onion, chopped
2 Carrots, diced
2 Celery Stalks, diced
1 lb Ground Plant-Based Protein
1/2 Cup Frozen Peas
1/3 Cup Tomato Paste
1/4 Cup Gluten-Free Flour
2 Cups Vegetable Stock
1 Tsp Dried Thyme
1/2 Tsp Ground Black Pepper
1/2 Tsp Sea Salt
2 Large Sweet Potatoes, peeled and cubed
2 Tbsp Coconut Oil
2 Tbsp Fresh Parsley, chopped
