Ask the Chef – Tips & Tricks

Use Cooking Spray: Use cooking spray to coat your muffin tin so that the egg white cups easily release from the pan. Alternatively, you can line each muffin cup with silicone liners to make the egg white cups easier to lift out.
Non-Stick Pan: Cooking the onions and bell pepper in a non-stick pan or a well-seasoned cast iron skillet will prevent the vegetables from sticking to the pan.
Don’t Overfill: Fill each muffin cup about 2/3 full, so that the egg whites have room to expand and rise without overflowing.
Customize It: You can add other veggies or cooked meats such as spinach, mushrooms, diced ham, or crumbled bacon to the egg white cups.
Serve Immediately: Egg white cups are best served immediately after baking while hot and fresh out of the oven. If you have leftovers, store them in an airtight container in the refrigerator and reheat in the microwave for a quick breakfast or snack.
