1 Cup Quinoa
1/4 Cup Extra-virgin Olive Oil
2 Cloves Garlic, minced
1 Red Onion, diced
1 Red Bell Pepper, diced
1 Zucchini, diced
1/2 Cup Kalamata Olives, pitted and halved
1/4 Cup Parsley, chopped
1/4 Cup Feta Cheese, crumbled
1/4 Cup Sun-dried Tomatoes, chopped
2 Tbsp Fresh Lemon Juice
1/2 Tsp Dried Oregano
1/4 Tsp Ground Black Pepper
1/4 Cup Pomegranate Arils


1. Bring a medium pot of water to a boil over high heat. Once boiling, add the quinoa and reduce the heat to medium-low. Simmer for 15 minutes, stirring occasionally. Drain the quinoa and fluff with a fork.

2. In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and sauté for 3 minutes.
