  • 2 lbs fresh strawberries
  • 1 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 3/4 cup champagne
  • 1 package powdered fruit pectin
  • 1/2 tsp butter (optional)


  1. – Rinse and hull the fresh strawberries, then coarsely chop them and place them in a large saucepan.
  2. – Add the granulated sugar, lemon juice, and champagne to the saucepan with the strawberries.
  3. – Stir well to combine the ingredients and then put the saucepan over medium-high heat.
  4. – Frequently stir the mixture and bring it to a boil.
  5. – After boiling, reduce the heat to low and simmer the mixture for about 25 minutes, or until the strawberries are very soft and the mixture has thickened.
  6. – Remove the saucepan from the heat and let it cool for a couple of minutes.
  7. – Stir in one package of powdered fruit pectin to the saucepan’s strawberry mixture and mix vigorously until the pectin is fully incorporated.
  8. – If desired, stir in 1/2 tsp of butter to reduce foam on the surface of the jam.
  9. – Transfer the jam to sterilized jars and let cool to room temperature.
  10. – Store in the refrigerator for up to several months.
