Ingredients
- 2 lbs fresh strawberries
- 1 1/2 cups granulated sugar
- 1/4 cup lemon juice
- 3/4 cup champagne
- 1 package powdered fruit pectin
- 1/2 tsp butter (optional)
Instructions
- – Rinse and hull the fresh strawberries, then coarsely chop them and place them in a large saucepan.
- – Add the granulated sugar, lemon juice, and champagne to the saucepan with the strawberries.
- – Stir well to combine the ingredients and then put the saucepan over medium-high heat.
- – Frequently stir the mixture and bring it to a boil.
- – After boiling, reduce the heat to low and simmer the mixture for about 25 minutes, or until the strawberries are very soft and the mixture has thickened.
- – Remove the saucepan from the heat and let it cool for a couple of minutes.
- – Stir in one package of powdered fruit pectin to the saucepan’s strawberry mixture and mix vigorously until the pectin is fully incorporated.
- – If desired, stir in 1/2 tsp of butter to reduce foam on the surface of the jam.
- – Transfer the jam to sterilized jars and let cool to room temperature.
- – Store in the refrigerator for up to several months.
