1 Large Potato
2 Garlic Cloves
1 Tbsp Tomato Paste
2 Tbsp Olive Oil
3 Cups Vegetable Broth
1/2 Cup Cooked Red Lentils
1/2 Cup Chopped Dill
1/2 Cup Sour Cream
1 Tsp Salt
1 Tsp Pepper
1 Tsp Ground Cumin
1 Tsp Ground Coriander
1 Tsp Paprika
1. Preheat oven to 400°F.
2. Peel and dice the potato, onion, carrot, and beet.
3. Place the diced vegetables on a baking sheet and drizzle with olive oil.
4. Roast the vegetables in the oven for 20 minutes.
