1 lb Sweet Potatoes
4 oz Pancetta
2 cloves Garlic
1/2 Onion
3 Large Eggs
1/2 cup Heavy Cream
2 tbsp Olive Oil
1/4 cup Parmesan Cheese
Parsley (optional)


1. Preheat the oven to 400°F. Cut the sweet potatoes into small cubes and spread them onto a baking sheet. Drizzle with olive oil, salt, and pepper. Bake for 25 minutes, or until the potatoes are tender.
