– 4 boneless chicken breasts
– Salt and pepper
– 1 tablespoon olive oil
– 1 cup chopped mushrooms
– 1 shallot, minced
– 2 cloves garlic, minced
– 1/2 cup white wine
– 1/2 cup heavy cream
– 1/4 cup dijon mustard
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped fresh chives
– 1 package thawed puff pastry
– 1 egg, beaten

Instructions


1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. Season chicken breasts with salt and pepper.
3. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until browned on both sides for about 2-3 minutes each. Set aside to slightly cool.
