German Spaetzle Dumplings (Spatchel) Recipe


  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon white pepper
  • 2/3 cup milk
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • 4-6 quarts water
  • 1-2 teaspoons salt (for boiling water)


  1. In a large mixing bowl, whisk together the all-purpose flour, salt, ground nutmeg, and white pepper.
  2. In a small saucepan, heat the milk and unsalted butter until the butter is completely melted.
  3. Add the milk-butter mixture, and the large eggs to the mixing bowl and stir until the dough comes together.
  4. Let the dough rest for at least 20 minutes.
  5. Bring 4-6 quarts of water to a boil and add 1-2 teaspoons of salt to the water.
  6. Scrape the dough into the pot of boiling water in batches.
  7. Using a slotted spoon, skim the dumplings from the water and place them in a large bowl.
  8. Toss the dumplings with butter or gravy and other desired toppings.
