– 1 Baguette
– 6 Slices of Bacon
– 2 Tbsp Olive Oil
– 1 Pint Cherry Tomatoes
– 1 Bell Pepper
– 1/4 Red Onion
– 1/4 Cup Balsamic Vinegar
– 1/4 Cup Olive Oil
– 1 Tsp Sugar
– 1/2 Tsp Salt
– 1/4 Tsp Black Pepper
– 2 Cups Arugula


1. Preheat the oven to 400°F.
2. Cube the baguette and toss it with 2 tbsp of olive oil.
3. Place the bread cubes on a baking sheet and bake them until they’re golden brown, about 8-10 minutes.
4. Cook the bacon slices in a skillet over medium heat until they’re crispy.
5. Remove the bacon from the skillet and crumble it into small pieces.
6. Set aside the bacon and keep the bacon grease in the pan.
7. Chop the cherry tomatoes, bell pepper and red onion into small pieces.
8. In a bowl mix together balsamic vinegar, olive oil, sugar, salt and black pepper to create the dressing
9. In a large bowl, add the baked bread cubes, chopped tomatoes, bell pepper, red onion and bacon pieces.
10. Pour dressing over the salad and then toss it so everything gets well-incorporated.
11. Add arugula and toss well.
