Ingredients

  • 1 lb Ground Beef
  • 1 Red Onion, diced
  • 2 Garlic Cloves, minced
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 1 Tbsp Olive Oil
  • 1 Can (15 oz) Black Beans, drained and rinsed
  • 1 Can (15 oz) Kidney Beans, drained and rinsed
  • 1 Can (15 oz) Corn, drained
  • 2 Cans (14.5 oz each) Diced Tomatoes with their juice
  • 1 Tbsp Chili Powder
  • 1 Tsp Ground Cumin
  • 1 Tsp Paprika
  • 1/4 Tsp Cayenne Pepper
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1/4 Tsp Dried Oregano
  • 1 Cup Tequila
  • 2 Tbsp Tomato Paste
  • 1 Cup Beef Broth

Instructions

  1. – In a large pot, sauté ground beef until browned. Remove from pan and set aside.
  2. – In the same pot, add diced onion, minced garlic, green bell pepper, and red bell pepper. Cook until onion is translucent.
  3. – Add cooked ground beef back into the pot.
  4. – Add in black beans, kidney beans, corn, diced tomatoes with their juice, chili powder, ground cumin, paprika, cayenne pepper, salt, black pepper, and dried oregano. Stir well.
  5. – Pour in tequila, tomato paste, and beef broth.
  6. – Cook for 30-45 minutes, or until chili has thickened.
  7. – Serve hot and enjoy!
