1 Cup Quinoa
2 Cups Low-sodium Vegetable Broth
2 Tbsp Olive Oil
2 Garlic Cloves, Minced
1/2 Onion, Chopped
1/2 Cup White Wine
1 Pound Assorted Wild Mushrooms, Sliced
1/4 Cup Fresh Parsley, Chopped
1/2 Cup Parmesan Cheese, Grated
1/2 Cup Heavy Cream
2 Large Eggs
Salt and Pepper to Taste
1. Preheat oven to 350°F.
