1 Red Onion
1 Red Bell Pepper
1 Jalapeno Pepper
1 Clove of Garlic
1 Tbsp of Olive Oil
1/4 Cup of Vegetable Broth
1/2 Tsp of Cumin
2 Tsp of Chili Powder
1/4 Tsp of Cayenne Pepper
1/2 Tsp of Paprika
1/4 Cup of Shredded Cheese
1/4 Cup of Cilantro
1/3 Cup of Sour Cream
1/2 Cup of Enchilada Sauce
1/4 Cup of Salsa
1 Avocado
1 Lime
1/4 Cup of Diced Tomatoes


1. Preheat the oven to 350°F.

2. Dice the red onion, red bell pepper, jalapeno pepper, and garlic.

3. Heat the olive oil in a large skillet over medium heat. Add the diced onion and peppers and garlic and cook for about 5 minutes until the vegetables are softened.
