4 Portobello Mushroom Caps
1 Red Onion
1 Red Bell Pepper
1 Yellow Bell Pepper
2 Cloves of Garlic
1 Tbsp Olive Oil
1/2 Cup of Vegetable Broth
1/4 Cup of Chopped Parsley
1/4 Cup of Chopped Fresh Basil
1/4 Cup of Chopped Kalamata Olives
1/4 Cup of Sun-dried Tomatoes
Salt and Pepper to Taste
