1 Head of Cauliflower, cut into florets
1 Onion, diced
2 Cloves of Garlic, minced
1 Cup Arborio Rice
4 Cups Vegetable Broth
½ Cup Dry White Wine
2 Tbsp Olive Oil
2 Tbsp Unsalted Butter
2 Tbsp Fresh Parsley, chopped
2 Tbsp Parmesan Cheese, grated
Salt and Pepper, to taste
1. Heat olive oil and butter in a large skillet over medium-high heat.
2. Add the onion and garlic and sauté for 4-5 minutes until onion is softened and lightly golden.
3. Add the cauliflower florets and sauté for an additional 3-4 minutes.
4. Add the arborio rice and stir to coat evenly.
5. Pour in the white wine and stir until the liquid is absorbed.
6. Begin adding the vegetable broth, 1 cup at a time, stirring frequently and allowing each cup to be absorbed before adding the next.
7. Continue stirring and adding broth until the rice is cooked al dente and tender.
8. Remove from heat and stir in the parsley, Parmesan cheese, and salt and pepper to taste.
