Ingredients


– 1 Head Cauliflower
– 1 Tbsp Olive Oil
– 1/2 Cup Onion, chopped
– 1/2 Cup Carrot, chopped
– 1/2 Cup Green Peas
– 2 Cloves Garlic, minced
– 2 Eggs, whisked
– 2 Tbsp Soy Sauce
– 1 Tbsp Sesame Oil
– Salt and Pepper, to taste

Instructions


1. Cut cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
2. Heat olive oil in a large skillet or wok over medium-heat.
3. Add chopped onion and carrot to the pan and stir for 2-3 minutes until slightly softened.
4. Add green peas and minced garlic, stir to combine and cook for another 2-3 minutes.
5. Move the vegetables to one side of the pan and add the whisked eggs to the other side. Scramble them until they’re just set, then mix with vegetables.
