1 ½ cups uncooked long-grain white rice
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, seeded and chopped
1 teaspoon smoked paprika
½ teaspoon saffron threads
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
1 cup diced tomatoes
1 cup chicken stock
1 cup frozen green peas
1 cup cooked chorizo sausage
1 cup cooked shrimp
1 cup cooked mussels
Salt and freshly ground black pepper, to taste
1 lemon, cut into wedges


1. Place the onion, garlic, bell pepper, paprika, saffron threads, cumin, and cayenne pepper in a slow cooker. Stir to combine.

2. Add the rice, diced tomatoes, chicken stock, and peas. Stir to combine.

3. Cover the slow cooker and cook on low for 4 hours, or until the rice is tender and the liquid has been absorbed.
