– 5 lb beef chuck roast
– 2 Tbsp kosher salt
– 2 Tbsp cracked black pepper
– 2 Tbsp garlic powder
– 2 Tbsp onion powder
– 2 Tbsp paprika
– 2 Tbsp dried oregano
– 2 Tbsp dried basil
– 2 Tbsp dried thyme
– 1/2 Cup dry red wine
– 2 Cups beef broth
– 1/2 Cup balsamic vinegar
– 1/4 Cup honey
– 2 Tbsp Worcestershire sauce
– 4 cloves garlic, minced
– 4 bay leaves
– 2 sprigs fresh rosemary
– 1/4 Cup all-purpose flour
– 2 Tbsp unsalted butter, at room temperature.

Instructions


1. Preheat oven to 350°F.
2. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, oregano, basil, and thyme.
3. Season the chuck roast generously with the spice mixture, pressing the spices into the meat.
4. In a large Dutch oven or oven-safe pot, heat some oil over medium-high heat. Sear the meat on both sides until browned, about 5 minutes per side.
5. Remove the meat from the Dutch oven and set aside.
