Classic French Beef Bourguignon Recipe

Ingredients

  • 2 Pounds Beef Chuck Roast
  • 1/4 Pound Bacon
  • 1 Bottle Red Wine
  • 2 Cups Beef Broth
  • 2 Tbsp Tomato Paste
  • 1 Onion
  • 4 Carrots
  • 4 Garlic Cloves
  • 1 Bouquet Garni
  • 2 Tbsp Flour
  • 2 Tbsp Unsalted Butter
  • Salt
  • Black Pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the beef chuck roast into bite-sized pieces.
  3. Cut the bacon into small pieces and cook in an oven-safe Dutch oven over medium heat until crispy.
  4. Remove the bacon with a slotted spoon and set aside.
  5. Season the beef with salt and pepper, then place it in the Dutch oven with the bacon fat and cook until browned on all sides.
  6. Remove the beef from the Dutch oven and set aside.
  7. Add chopped onion, garlic, and sliced carrots to the Dutch oven and cook until softened, about 5 minutes.
  8. Add flour and cook for an additional 2 minutes.
  9. Add the cooked bacon, beef, tomato paste, bouquet garni, and enough wine and beef broth to cover the beef by an inch.
  10. Stir the mixture to combine, then cover the Dutch oven and place it in the preheated oven.
  11. Cook for 2 1/2 to 3 hours, or until the beef is tender.
  12. Remove the bouquet garni and skim any excess fat off the surface.
  13. Add salt and pepper to taste.
